Ingredients
  

For the Chicken & Marinade:

  • 2 lbs boneless skinless chicken cubed {900g}
  • cup olive oil
  • ¼ cup fresh lemon juice
  • 4 cloves garlic minced
  • 1 tbsp honey
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • ½ tsp black pepper

For the Creamy Garlic Sauce:

  • ½ cup plain full-fat yogurt
  • cup mayonnaise
  • 3-4 cloves garlic grated
  • 2 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley
  • 1 tbsp milk as needed
  • Salt and pepper to taste

Instructions
 

  • Step 1: Marinate. Whisk marinade ingredients. Pat chicken dry, toss in marinade. Refrigerate 30 mins - 4 hours.
  • Step 2: Make Sauce. Whisk all sauce ingredients until smooth. Adjust seasoning. Refrigerate.
  • Step 3: Grill. Preheat grill to med-high. Thread chicken on soaked skewers. Grill 3-4 mins per side until cooked through (165°F).
  • Step 4: Rest & Serve. Let chicken rest 5 mins. Serve with lemon wedges, herbs, and creamy garlic sauce.

Notes

Chicken thighs are juicier. Skewers are optional. Sauce can be made 2 days ahead. Do not overcook small chicken pieces.
