  • 1 lb 454g ground turkey (93% lean)
  • 2 medium sweet potatoes diced into ½-inch cubes {~450g}
  • 1 small onion finely chopped {~100g}
  • 3 cloves garlic minced
  • 1 bell pepper any color, diced {~150g}
  • 2 tbsp 30ml olive oil
  • Seasonings
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp chili powder
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • Garnishes Optional
  • Fresh cilantro or parsley
  • Sliced avocado
  • Lime wedges

Instructions
 

  • Prep Vegetables
  • Peel and dice sweet potatoes into ½-inch cubes.
  • Finely chop onion and bell pepper.
  • Mince garlic.
  • Cook Aromatics
  • Heat 1 tbsp olive oil in a large skillet over medium heat.
  • Add onion and bell pepper; sauté 3–4 minutes until soft.
  • Stir in garlic; cook 30 seconds until fragrant.
  • Brown Turkey
  • Push veggies to one side; add remaining 1 tbsp oil.
  • Add ground turkey, breaking it apart with a spatula.
  • Cook 5–6 minutes until no longer pink.
  • Combine & Simmer
  • Add sweet potatoes and all seasonings; mix well.
  • Cover, reduce heat to medium-low, and simmer 12–15 minutes until potatoes are tender.
  • Finish & Serve
  • Remove from heat; let rest 5 minutes.
  • Garnish with cilantro, avocado, and lime.

Notes

Storage: Refrigerate leftovers for up to 4 days or freeze for 3 months.
Substitutions: Use ground chicken or black beans for variation.
